
INGREDIENTS
1 cup rolled oats
½ cup unsweetened shredded coconut
2 tbsp chia seeds
2–3 tbsp cacao nibs
1 tsp vanilla powder
⅓ cup maple syrup
2 tbsp melted coconut oil (optional but helps with texture)
PREPARATION
Mix in a bowl: oats, shredded coconut, chia seeds, vanilla powder, and cacao nibs.
Add the maple syrup and coconut oil.
Stir until the mixture comes together into a dough.
If too dry: add a bit more maple syrup or 1 tbsp water.
If too soft: add a little more oats.
Roll the mixture into balls with your hands.
Refrigerate for 20–30 minutes to firm up.
