
INGREDIENTS
3 pears
4 tbsp coconut oil
200 g semi‑whole wheat flour
60 g brown sugar
1 tsp baking powder
2 eggs
150 ml milk (dairy or plant‑based, as you prefer)
3 tsp cacao nibs
PREPARATION
Peel the pears and cut them into cubes. In a pan, heat the coconut oil and add the pears. Sauté for a few minutes until softened, then set aside.
In a mixing bowl, combine the flour, baking powder, and sugar. Add the eggs and milk, and mix until smooth.
Fold in the pears with their coconut oil, then the cacao nibs. Mix gently.
Pour the batter into a cake tin (or loaf pan) and bake in a preheated oven at 200°C for 15–20 minutes (check doneness with a knife; baking time will vary depending on your pan).
