
Ingredients
4 raw lobsters
1 tsp of kaffir lime
Soft butter
Garlic cloves
Flat-leaf parsley
Salt and pepper
Preparation
Step 1
If using frozen lobsters, thaw them in the refrigerator the day before. Plunge the lobsters (live or thawed) into a large amount of boiling water with about 10 grains of salt and pepper for 5 minutes. Drain and set aside.
Step 2
Preheat the oven broiler. Peel and crush the garlic. Rinse, dry, and chop the parsley. Grate the zest of the kaffir limes. In a bowl, carefully combine the softened butter, garlic, parsley, zest, salt, and pepper.
Step 3
Place the lobsters on a board and split them in half, starting with the belly (using a good knife). Collect the juices and mix them with the flavored butter.
Step 4
Place the lobster halves on a baking sheet and brush the flesh with the flavored butter. Place under the grill for about 10 minutes. Serve warm with the remaining butter in a small bowl.
