MATANA-STYLE COCONUT CHICKEN

INGREDIENTS

  • 500g of chicken meat

  • 1 can of coconut milk

  • 100g of multi-colored cherry tomatoes

  • 2 small red peppers

  • 2 small orange peppers

  • 2 small yellow peppers

  • A few coriander leaves

  • 1 tsp turmeric powder

  • 1 pinch of kaffir lime powder

  • 2 pinches of cinnamon powder

  • 1 tsp wild voatsiperifery pepper: black and white

  • 1 tsp pink berries

  • 3 cloves of garlic

  • 1 shallot

PREPARATION

  • Mix and blend the 2 cloves of garlic, the wild peppers with a little oil;

  • Marinate the chicken with the mixture for at least 1 hour;

  • Brown the chicken in a little butter or roast it in an AirFryer for 25 minutes;

  • Brown the shallot and garlic clove in a saucepan;

  • Add the roughly sliced peppers;

  • Add the cherry tomatoes;

  • Add the chicken and let it soak up the sauce;

  • Add coconut milk with a little water to taste;

  • Add the turmeric, cinnamon, and kaffir lime;

  • Simmer over low heat for 10 minutes

  • Sprinkle with coriander leaves before serving.
