A healthy, flavorful Recipe with Fair Trade ingredients

When we think about chicken, we usually imagine a classic roast or a simple grilled filet. But this versatile meat can be transformed into an exotic, mouthwatering dish—especially when paired with Madagascar’s exceptional spices.

This coconut chicken recipe is easy to prepare, packed with nutrients, and infused with bold, natural flavors that will transport your senses.

Nutritional benefits of chicken

Chicken is a lean, protein-rich meat that’s naturally low in fat (especially without the skin) and calories. It's also a great source of B vitamins and essential minerals like iron, making it a smart option for those who want to eat healthy without sacrificing taste.

For athletes or active individuals, chicken supports muscle development and performance thanks to its high-quality protein and vitamin B content, which helps reduce fatigue. (Sources : Le Picoreur)

🍚 Perfect Side Dishes

1. Steamed Jasmine or Basmati Rice

A classic and neutral base that absorbs the creamy coconut sauce perfectly. The subtle fragrance of jasmine or basmati complements the bold spices without overpowering them.

2. Coconut Rice with Lime Zest

For an extra tropical touch, cook your rice with a splash of coconut milk and finish with a hint of lime zest. It pairs beautifully with the citrus notes of combava.

3. Roasted Vegetables

Carrots, zucchini, and sweet potatoes roasted with a light drizzle of olive oil and a pinch of turmeric offer a comforting, earthy contrast.

4. Grilled Plantains or Cassava Fries

Want to explore more African or tropical flavors? Serve with crispy cassava fries or sweet grilled plantains for a delicious, exotic twist.

5. Light Cucumber & Mint Salad

A fresh salad with cucumbers, mint, and a squeeze of lime adds a refreshing counterpoint to the warmth of the spices.

Spotlight on Madagascar’s Finest Spices

🌟 Turmeric – Golden and Powerful

Known for its anti-inflammatory and antioxidant properties, turmeric aids digestion and liver function. The Madagascar variety is especially rich in curcumin, its most active compound, and is also fantastic for skin health.

🍋 Combava (Keffir Lime) – A Hint of the Exotic

Combava powder adds a unique citrusy, slightly floral touch to dishes. Just a pinch can completely elevate your recipes with fresh, tropical notes. Use it sparingly—it's very aromatic!

🌱 Voatsiperifery – The Wild Pepper of Madagascar

This rare pepper grows wild in Madagascar’s rainforests and is hand-harvested. It’s less spicy than traditional pepper but full of deep, earthy, floral flavors. It’s a must-try for spice lovers.

💗 Pink Berries – Sweet and Peppery

Often mistaken for peppercorns, pink berries add a slightly sweet, fragrant kick to white meats and fish. They also bring a beautiful color contrast to your plate.
