Recipe: Hazelnut & Cocoa Bean Breakfast Bread


This delicious bread is loaded with natural goodness—fiber, healthy fats, complex carbs, and, of course, bold flavor. Ideal with a spoonful of Greek yogurt, a slice of prosciutto, or your morning coffee or tea.


Ingredients

  • 150g organic wheat flour (T65)

  • 100g whole wheat flour

  • 165g water (20°C)

  • 65g liquid sourdough starter

  • 5g sea salt

  • 20g cane sugar

  • 12g soft butter

  • 12g rum

  • 2 tbsp rolled oats

  • 2 tsp flax seeds

  • 2 tbsp Matana cocoa beans (or cocoa nibs)

  • 70g chopped hazelnuts


Instructions

  1. Mix the dough with all dry ingredients except cocoa and hazelnuts. Add wet ingredients and knead until smooth. Let rise in a covered bowl for 3–4 hours.

  2. Add the cocoa beans and hazelnuts, shape into a loaf, and let rest.

  3. Bake at 220°C (428°F) for 30–35 minutes. Cool on a rack and enjoy!
