Recipe: Hazelnut & Cocoa Bean Breakfast Bread

Ingredients
150g organic wheat flour (T65)
100g whole wheat flour
165g water (20°C)
65g liquid sourdough starter
5g sea salt
20g cane sugar
12g soft butter
12g rum
2 tbsp rolled oats
2 tsp flax seeds
2 tbsp Matana cocoa beans (or cocoa nibs)
70g chopped hazelnuts
Instructions
Mix the dough with all dry ingredients except cocoa and hazelnuts. Add wet ingredients and knead until smooth. Let rise in a covered bowl for 3–4 hours.
Add the cocoa beans and hazelnuts, shape into a loaf, and let rest.
Bake at 220°C (428°F) for 30–35 minutes. Cool on a rack and enjoy!
